Ingredients

 

4 medium kumara

Westgold Salted butter for brushing

½ red pepper, chopped

2 spring onions, sliced

3 Tbsp Westgold Salted butter

1 garlic, crushed

1 cup chickpeas, drained

1-2 tsp smoked paprika

½ tsp chilli powder

Salt and pepper

Method

 

Grease kumara all over with butter and season. Wrap in tinfoil and bake in the coals or BBQ until cooked through when skewered.

 

Melt the butter and cook the red pepper, spring onions, and garlic on low heat until softened.

 

Add the smoked paprika, chilli powder, and chickpeas, stirring until coated and warmed through.

 

When the kumara is cooked, undo the foil and slice open lengthways. Spoon in the prepared chickpeas and serve.
