Ingredients:

3–4 fresh corn cobs

 

Seasoning butter
100g Westgold Salted Butter, soft
1 lime, zest and juice
3–4 garlic cloves, crushed
1 red chilli, chopped
Small handful coriander, chopped
2 tsp taco spice mix

 

Dipping butter
75g Westgold Salted Butter, soft
1 lime, zest and juice
2 Tbsp coriander, chopped

Method

 

 

To make the seasoning butter
Mix all the ingredients together until well combined.

 

To prepare the corn
Peel and trim the corn cobs. Place upright on a tea towel on a chopping board. Use a sharp knife with a rocking motion to carefully cut them in half lengthways, then into quarters. Place kernel side down and use the knife tip to gently press through the core in sections (cutting too forcefully can shatter the cobs).

Preheat an air fryer or grill to 200°C. Brush the corn ribs liberally with the seasoning butter and cook for 10–12 minutes until sizzling and lightly charred. Serve with dipping butter.

 

To make the dipping butter

Whip all ingredients with an electric beater until light and creamy. Serve at room temperature.
