Ingredients:

 

Prawns:

15-20 banana prawns

 

Chilli herb butter:

0.9 oz salted Westgold Butter, soft

1-2 garlic cloves, crushed

1 T chopped oregano

1T chopped coriander

½ t chilli flakes

Zest 1 lime

Salt and pepper

Olive oil for BBQ

 

Coriander mayonnaise:

½ c mayonnaise

Juice ½ lime

1 garlic clove, crushed

1T coriander, chopped

Lime wedges to serve

Method:

 

First prepare the mayonnaise by mixing all the ingredients together using a stick blender.  Pour into a serving bowl, cover and refrigerate until needed. 

 

Prepare the prawns by peeling off the body shell and legs, leaving the head and tail attached. 

 

Make the herb chilli butter by mixing together all the ingredients. 

 

Heat the BBQ hotplate to a high temperature, brush with oil and place on the prawns.  Dab the prawns with the chilli butter and cook for 2-3 mins.  Turn the prawns over and dab more chilli butter liberally for the final minutes of cooking. 

 

Remove from the BBQ plate onto a platter and serve immediately with the coriander mayonnaise and extra wedges of lime.
