Makes 15 pairs

Ingredients:

 

8.8 oz Westgold butter
1 cup icing sugar
10.6 oz standard flour
3.5 oz cup custard powder

 

Icing
12 tbsp of icing sugar
2 tbsp custard powder
2 tbsp Westgold butter
2 or 3 tbsp boiling water

Method:

 

Preheated oven to 320°F.

 

Cream together the butter and icing sugar until white, ensuring you scrape the sides of the bowl several times. Add the flour and custard powder then mix together.

 

Once mixed, roll into balls on a tray and flatten down with a fork. Bake in oven for 10 minutes.  

 

Remove from oven and place onto a rack to cool.

 

Icing


Mix all ingredients together until smooth, then ice the bottom sides of the biscuit and join together.

 

For best results store them in a tin.
