Ingredients:

 

100gm salted butter, soft

1T black garlic paste

Black pepper

200gm fresh spaghetti

1 lemon, juice and zest

1/3 c crispy shallots

1/3c toasted seeds

baby rocket to serve

Method

 

Make the black garlic butter by mixing the butter, garlic paste and pepper together until smooth.

 

Cook the spaghetti to the manufacturer’s instructions.

 

Heat a large frypan over medium heat and add 2 heaped tablespoons of black garlic butter and melt. 

 

Add the strained, cooked spaghetti, lemon juice and zest and toss the pan to coat the pasta in butter.

 

Place the spaghetti into serving bowls.  Add a dollop of black garlic butter on the top.  Sprinkle over the crispy shallots and toasted seeds.

 

Place the baby rocket to the side.

 

Serve immediately.
