Ingredients:

 

2 heads broccoli
200g large spinach leaves
1 onion or leek, chopped
3 Tbsp Westgold Salted Butter
2 cloves garlic, crushed
Zest ½ lemon
2 Tbsp fresh herbs, chopped
1½ cups crème fraiche
1 cup tasty cheese, grated
½ cup mozzarella, grated
Salt and pepper
3 slices bread
½ cup crispy onions
Extra grated cheese for sprinkling

Method

 

Preheat oven to 200˚C.

 

Sweat the onion or leek and garlic in butter until softened and lightly browned. Cut the broccoli into small florets.

 

Add the broccoli and spinach to the pan and toss until coated in butter and the spinach has just wilted. Pour in the crème fraiche, herbs, cheeses, and season well.

 

Tip into an ovenproof dish. Sprinkle over breadcrumbs and extra cheese. Bake for 10–15 minutes until bubbling and golden (adjust depending on how cooked you like the broccoli).

 

Top with crispy onions and serve.
