Ingredients

 

4 large cooked potatoes

50g salted butter, soft

2-3 garlic cloves, crushed

2 tsp rosemary, chopped

2 tsp thyme, chopped

2 tsp cracked pepper

Sea salt to sprinkle

2 tbsp parmesan, grated

Method

 

Preheat oven to 220°C.

 

Cut the potatoes into chunky 2-3cm fries.

 

In a bowl, mix the butter, garlic, herbs and pepper together.

 

Brush a generous layer of garlic butter on the bottom of a large baking tray.

 

Spread out the fries in a single layer and brush all over with the garlic butter. Sprinkle with sea salt.

 

Place in the oven for 15-20 minutes until starting to turn golden and crispy on both sides.

 

Place into a serving dish and serve with aioli and chutney if desired. Serve immediately.

 

Note: these fries can be cooked in an air fryer.
