Ingredients:

 

2 heads broccoli
7 oz large spinach leaves
1 onion or leek, chopped
3 Tbsp Westgold Salted Butter
2 cloves garlic, crushed
Zest ½ lemon
2 Tbsp fresh herbs, chopped
1½ cups crème fraîche (or sour cream)
1 cup sharp cheddar cheese, grated
½ cup mozzarella, grated
Salt and pepper
3 slices bread
½ cup crispy onions
Extra grated cheese for sprinkling

Method

 

Preheat oven to 400˚F.

 

Cook the onion or leek and garlic in butter until softened and lightly browned. Cut the broccoli into small florets.

 

Add the broccoli and spinach to the pan, toss to coat in butter until the spinach wilts. Stir in crème fraîche, herbs, cheeses, and season well.

 

Tip into a baking dish. Sprinkle with breadcrumbs and extra cheese. Bake for 10–15 minutes until bubbling and golden (adjust to your preferred broccoli doneness).

 

Top with crispy onions and serve.
