Ingredients

 

4 thick slices rye bread, toasted

3 Tbsp salted butter

2 cup swiss brown mushrooms, sliced

2 cup portabello mushrooms, sliced

Salt and pepper

Crumbled feta to sprinkle

 

Za’atar butter:

 

3 Tbsp salted butter, soft

1 Tbsp dried oreganium

1  Tbsp dried thyme

1  Tbsp cumin powder

1  Tbsp sumac

1  Tbsp sesame seeds, toasted

Black pepper to taste

Method

 

To make the butter: Place all the ingredients into a bowl and mix together until smooth. Cover and keep at room temperature until needed.

 

To make the mushrooms: Melt the butter in a large frypan. Add the mushrooms and toss around 3-5 mins until cooked. Season. Spread the warm toast with the Za’atar butter and top with the cooked mushrooms. Sprinkle over the feta. Serve immediately.
