Ingredients:

125g Westgold Unsalted Butter, soft

¾ cup of brown sugar

75g dark chocolate, melted

1 egg yolk

1 tsp vanilla extract

1 cup of flour

¼ tsp baking soda

¼ cup of cocoa powder

½ cup of dark chocolate, chopped

Pinch of salt

Cherry jam

Method

 

Beat the butter, salt and brown sugar until light and creamy.

 

Beat in the egg yolk and vanilla. Add the melted chocolate and mix until combined.

 

Sift the flour, baking soda and cocoa powder and add to the creamed mixture. Add the chopped chocolate.  Mix until combined. Place in the fridge for 30 mins.

 

Preheat the oven to 180deg. Roll the mixture into a ball and place on baking paper.

 

Press an indent into the middle and fill with cherry jam.  Bake 8-10 mins for a soft cookie. Leave on the paper until cold. Dust with icing sugar if desired.
