Method

 

Brioche Bun made with Westgold, however you can use any brioche for this recipe.

 

Bacon weave basted with Westgold Infused Cinnamon Sugar Butter: Weave bacon strips together to make a 150mmx150mm weave and then grill until golden while basting with Westgold Infused Cinnamon Sugar Butter. Weave will be 100x100mm once cooked.

 

Reverse seared tomahawk steak, seared in Westgold Infused Garlic & Parsley Butter: Season with salt and pepper and then Smoke tomahawk steak until 115°F and then into a cast iron pan and baste with Westgold Infused Garlic & Parsley Butter until 130°F and rest for 5 mins.

 

Mac and Cheese with Westgold Salted: Make this ahead of time. We make a roux with Westgold UHT Cream and Westgold butter and then season and add more milk, cream and cheese to taste.

 

Westgold UHT Cream Chili Butter Fried Chicken: Add lemon to UHT cream to turn into a buttermilk-like consistency. Marinate chicken thighs for 12 hours in the buttermilk and seasoning. Then coat in flour and salt and pepper and fry in canola oil until chicken is 180°F in all parts.

 

Baste with melted Westgold Infused Chilli & Garlic Butter and salt and pepper.

 

To stack the burger: Have the tomahawk as the base, buttered Westgold Bun, then fried chicken, mac and cheese on top, bacon weave, buttered Westgold top bun. Baste the top bun with Westgold and season.
