Ingredients:

 

1 Medium fresh whole Flounder

1.76 oz Butter

1 Tbsp Italian parsley, coarsely chopped

1 Lemon – half juice, half grilled as garnish

Olive oil

Sea salt 

Method:

 

 

Lightly oil and season the flounder.

 

Score/make incisions through skin on both sides of fish.

 

Season fish.

 

Sear until just cooked in a hot cast iron pan, turning once.

 

Remove from pan and keep warm on serving platter.

 

To the hot pan add the butter and cook until it starts to foam and turn brown. Remove from heat, add parsley and lemon juice. Spoon over fish and serve with grilled lemon.
