8 as a starter or 4 for main meal

Ingredients:

 

500g Whitebait
2 eggs
Salt
Westgold butter for the pan

Method:

 

Drain, don't wash, the whitebait.


Beat eggs until fluffy (well mixed). Add salt to taste. Add in whitebait and mix gently.

 

Heat butter in the frypan so it's just coloured, not burnt. Put spoonfuls of batter mixture in and cook until whitebait changes colour. Then turn. Give it just enough time on the other side to cook it. 


Then enjoy with fresh lemon. Fabulous also with fresh bread and more butter slathered on.
