Ingredients:

1 whole trout

1 x lemon chopped

1 x whole chilli chopped

2 cloves chopped garlic

Handful fresh mint & thyme

1–2 Packet of streaky bacon

Bunch Broccolini

 

Butter Almond Sauce

2 Tbsp Westgold Salted Butter

Sliced almonds

½ cup capers

Juice from ½ lemon

Method

 

Scale and clean the trout.

 

Stuff with lemon, chilli, garlic, mint & thyme.

 

Wrap in bacon, overlapping.

 

Place on a hot BBQ – cook both sides.

 

Cook broccolini and place on top of the cooked trout.

 

Butter Almond Sauce

Melt 100g of butter in a pan.

 

Add a large handful of sliced almonds, capers and lemon juice. Pour over the trout & broccolini.


Serve immediately.
