Ingredients

 

1 chopped onion

2 cloves chopped garlic

Venison sausages (skin removed and made into small meatball size)

Small packet of bacon – chopped

1 red chill chopped and seeds removed

1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme

1 tsp paprika

400g tin chopped tomatoes

400g tin kidney beans

2 handfuls fresh kale or spinach

Westgold butter

Eggs

Salt & pepper

 

Method

 

Fry bacon fat in pan. Add onions and garlic and cook until soft. Add large slice butter, chilli, bacon. and sausage balls.

 

Once cooked add thyme.

 

Add kale or spinach and let wilt.

 

Add tinned tomatoes and kidney beans – mix, bring to boil and cook through.

 

Once cooked through make wells in the mixture and add an egg to each well.

 

Sprinkle salt and pepper over the eggs.

 

Put the lid on the pan and cook the eggs.

 

Serve with crusty bread and butter.
