Ingredients

 

Whitebait

2 large potatoes

1 chopped clove garlic

1 tablespoon chopped thyme

Westgold butter

Fresh parsley or chives

Salt & pepper

 

Method

 

Grate potatoes and season with salt & pepper and add ¼ cup melted butter – mix well.

 

Add butter to a frying pan and melt. Add small balls of potato to the pan and flatten each ball with a spoon.

 

Cook through, turning so potato brown on each side. Remove from the pan onto a plate.

 

Add generous knob of butter and garlic to the fry pan.

 

Once the butter is melted and hot add the whitebait and cook through.

 

Top each potato rosti with the cooked whitebait.

 

Garnish with chopped fresh parsley or chives.
