Ingredients
4 Orange Kumera
2 cups mayonnaise
1 heaped teaspoon smoked paprika
2 Spring onions chopped
Extra virgin Olive oil
Chopped flat leaf parsley
Sea salt & pepper
Method
Slice Kumera lengthways and put on hot BBQ, Drizzle with extra virgin olive oil and roast (close the BBQ lid).
Once roasted take half the roasted kumera and chop.
Mix mayonnaise with spring onion, smoked paprika and chopped kumera.
Place on a plate and top with the remainder roast kumera.
Season with salt & pepper & drizzle with extra virgin olive oil and sprinkle chopped flat leaf parsley.
