Ingredients

 

3 venison Livers (or substitute with pig / lamb / goat)

1 chopped onion

1 cup chopped mushrooms

2 cloves chopped garlic

Fresh rosemary

1 tablespoon cooking oil

1 tablespoon apple cider vinegar

3 slices Westgold Butter

2 eggs

Salt & pepper

 

Method

 

Add oil to pan and cook onions and mushrooms until soft. Add butter to caramelize. Remove from pan and set aside.

 

Slice livers and season with salt. Add to pan and cook both sides. Add apple cider vinegar.

 

Once liver is cooked through add mushroom mix to the pan. Add a splash of apple cider vinegar and let sit for 1 minute in the pan, then dish between 2 plates.

 

Pan fry both eggs in dash of oil Once cooked add one egg to each plate on top of the mushroom / livers mix.

 

Sprinkle over pepper and fresh chives/ herbs – whatever is available.

 

Serve with fresh crusty bread.
